Vakhtanguri was founded in 1993, in the heart of Tbilisi – Avlabari, by four sisters. From its very first days, the restaurant took a special place on the city’s culinary map. Over the past three decades, Vakhtanguri has grown beyond being merely a restaurant; it has become a space where the spirit of Old Tbilisi, the authenticity of Georgian cuisine, and a tradition of true family-style hospitality coexist in one unique environment.

Today, Vakhtanguri is preparing to return to the exact place where its history began.

The Beginning: From Concept to Success

The story of Vakhtanguri starts in 1993, in a complex period for the country, when four sisters (Nana Chubinidze, Manana Chubinidze, Lali Chubinidze, and Leila Chubinidze) decided to create a place that would breathe new life into the traditions of Georgian cuisine.

The initial concept was simple: a small, buffet-style space where guests could enjoy traditional Georgian dishes quickly, affordably, and deliciously.

What started as a small family-run buffet soon became a key gastronomic point for locals and a gathering place for cultural personalities from different parts of Georgia. Shortly after opening, the restaurant expanded – creating a new dining area with up to 10 private booths and an open-seating section. This step changed the scale and character of Vakhtanguri forever.

Vakhtanguri’s success was not driven by marketing, but by three core strengths:

  • Professional chefs who built the restaurant’s reputation over decades

The Avlabari Era – The Soul of Old Tbilisi

From 1993 to 2016, Vakhtanguri was located in Avlabari – one of the oldest and historically rich districts of Tbilisi. The location captured the true spirit of the capital – its architecture, rhythm, atmosphere, and character.

The interior and exterior were defining elements of the restaurant’s identity. Everything was designed according to the principle of authenticity, allowing each visitor to feel like a part of the city’s history.

The Details That Shaped the Space

  • Artist-painted booths by Tengiz Kikalishvili – The hand-painted murals created by Kikala became one of the most iconic elements of Vakhtanguri. The colors, shapes, and artistic energy brought a truly distinctive style to the space.
  • Stained-glass and mosaic decor – Mosaic elements and stained-glass windows made the interior unique with bold, yet harmonious contrasts.
  • The courtyard waterfall and fountain – The sound of water, the peaceful atmosphere, and the natural beauty of the courtyard were often the most memorable features for guests.
  • The statue of Dionysus (the symbol of Vakhtanguri) – The iconic sculpture by Kikala became the visual identity of the restaurant. This centerpiece will once again welcome guests at the renewed location.

Since 1993, restaurant has remained devoted to the same culinary philosophy that defines Georgian cuisine. Recipes passed down through generations have been preserved in their original form – safeguarding the true flavor and value of natural ingredients. The restaurant never simplified or altered its signature dishes for trends or convenience. Vakhtanguri continues to uphold the authentic nature of Georgian culinary heritage.

2016-2026: Change, Growth, and a Return to the Roots

Over its 33-year history, Vakhtanguri has experienced many milestones.

In 2016, after the Avlabari property was sold, the restaurant moved to Vaja-Pshavela Avenue, where it continued to operate until 2019. Then came a period that affected the entire world – the COVID-19 pandemic, forcing Vakhtanguri to temporarily close for two years.

Despite the challenges, restaurant reopened in 2021 in a renewed location in Elia and continued its legacy.

Now, in early 2026 – after 10 years – We return to where it all began: on the same ground where the restaurant was founded in 1993. This return is symbolic – a fusion of past and present, preserving history while creating a new chapter.
