What kebab is

Kebab is a minced-meat dish that is widespread across the Caucasus and the Middle East. Its base is seasoned ground meat, which is shaped onto a skewer and cooked over charcoal.

The Tbilisi version is known as a soft, fluffy and aromatic dish. Its flavour comes from Georgian spices, and cooks usually keep the exact composition of the mince a secret.

Mince, fire and lavash

Good kebab mince has to be uniform enough not to fall apart on the skewer, which is why it is usually left to rest before grilling. The kebab then cooks over charcoal for a few minutes, so that it browns outside and stays juicy inside.

Kebab is traditionally served on or in thin lavash. A tomato sauce makes the dish even more special.
